I can never just build a kit, can I?

I really want a 1920s inspired kitchen in the Heritage, but that side bay window just isn't having any of that. With my new planned staircase in the middle, the large window off the front porch and the side bay window taking up the better part of the third wall, there is literally no space for any kitchen furniture along the walls.
My options are limited. In the first scenario, I would close up the bottom half of the front porch window and replace it with a Houseworks casement window so I can put the sink there.

I plan to put a vintage stove to the left of the sink (modern stove used as a placeholder), so the bay window has got to go. Since I still have the bay window on the front of the house, I don't really mind closing up this space. I'll add another casement window or other small window on that wall to bring the light back in.
There will either be a cabinet or old time refrigerator in the space behind the stairs, and there is room for a small table and chairs in the middle.
In the second scenario, I would flip the living room and kitchen. The side window (which I moved previously) could be closed at the bottom and replaced with a casement window above the sink. More likely, however, I would disassemble this wall to put the side window back toward the front and add the casement window as an additional window. It's a long room and would benefit from the additional light.
The stove would be across from the sink, and I could perhaps put a small island between them. There would be a small table and chairs in the bay window with a door directly to the left. The stairs would continue up to the second floor on the left in this room, so I'd have to plan the door opening well. ;]
This would leave the living room on the opposite side, which might actually make more sense. You'd probably walk from the front door directly into the parlor, not the kitchen. The bay window still has to go, however, to make room for a fireplace.
Now I just need to make all these structural changes to the outer walls. :D

I do love visiting your blog and drop by each time I know you have put up a new post :-) I think your work is wonderful and just so inspiring!
I noticed the way you are building your stairs here. Great idea! One to tuck away in my list of things to do!
Did I win the give-a-way???? Please say YES!
Maybe, the previous owners loved the way retro appliances, but updated some furniture and cabinets.
Either layout, I am a big fan of the cabinet behind/ next to the stair case.
I like the second arrangement, especially the kitchen table and chairs in the bay window niche. So cozy that way.
